Actually, it's just a simple principle.
Because:
Water freezes at 0 °C
Cooled it in the freezer to almost 0 °C (2 hours around)
The bottle of coke is pressurized

Result:
At the moment you open that bottle, the pressure in the bottle gets rapidly lower
Open the Coke
The Coke suddenly got standard pressure, freezing point goes up
Coke is colder than the freezing point
Coke freezes
